A one pan healthy dinner with fresh veggies and tender salmon which is perfect for a busy weekday evening.
Ingredients
- 2 salmon fillets
- broccoli florets, bite size
- red onion, diced into chunks
- tomato, cut into half
- carrots, sliced
- thyme
- olive oil
- garlic cloves, minced
- 2 teaspoon lemon juice
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- fresh lemon slices
Instructions
- Preheat oven to 190C. Line a baking dish with foil. Place the broccoli and carrots in the dish, drizzle with 4 teaspoon of olive oil and season with salt and pepper. Baked for 8-10 minutes.
- Meanwhile, stir together mustard, honey, 1 teaspoon olive oil, minced garlic and lemon juice, set aside.
- Remove the baking dish from oven. Place the salmon fillet and brush both sides with the mustard mixture, season with a fair amount of salt and pepper. Place red onion and tomatoes and drizzle with 1 teaspoon olive oil, thyme and season with salt and pepper.
- Return to oven and bake until salmon has cooked through and veggies have softened, about 10 minutes longer. Serve immediately with lemon slices.
