Pork chops with strawberry salsa
I must say, this is one of my favorite dish in the summer The slightly sweet and fruity taste of strawberry salsa is a fabulous pair with pork chops. This time I bought fresh strawberries from Marks & Spencer and they are so sweet and tangy to resist from eating. Try this recipe and I bet you will love it!
Ingredients
2 pieces pork chops
salt & pepper
fresh strawberries, halved the long way and cut into half moon slices
cherry tomatoes, quartered
fresh mint leaves, chopped
balsamic vinegar
salt
olive oil
How to make
Mix the strawberries, tomatoes, mint leaves in a bowl.
In a small bowl, whisk olive oil, vinegar and salt. Pour the mixture into the strawberries. Stir gently to combine. Refrigerate.
Season the pork chops with salt & pepper. Heat oil in a frying pan. Add the pork chops and cook each side for a few minutes until brown. Continue to cook until the the thermometer reads 66C. Wrap with foil paper and allow to rest for 5 minutes.
Spoon salsa over pork chops just before serving.
