Tomato egg drop soup トマトの玉子スープ

Tomatoes and eggs just go together well. – tomato and egg stir fry, tomato egg drop soup.  This is just a simple yet healthy and delicious soup for dinner.

Ingredients for 2 servings

1 ripe tomato (diced)
1 egg (beaten)
400ml water chicken stock
1 teaspoon oyster sauce
½ teaspoon sugar
salt & pepper, to taste
dash of vinegar (optional)
1 teaspoon constarch
2 teaspoons water

Instructions

  1. Bring the chicken stock to a simmer.
  2. Add the oyster sauce, sugar and tomato to the stock and simmer for about 5-6 minutes until the tomatoes start to soften. Add the starch water and mix.
  3. Pour in the egg mixture slowly, stir and pull the egg into strands. Turn off the heat.
  4. Add a drop of vinegar and salt & pepper to taste.
