The first time I has this dish was my trip to Saint Petersburg after a whole day visiting the Heritage Museum. This is a hot appetizer in the Russian cuisine and usually served in a small ceramic pot with one handle.
Ingredients serves 2
200g white mushrooms, thinly sliced
¼ yellow onion, thinly sliced
1 tablespoon butter
30ml white wine
80 ml sour cream
60ml whipping cream
½ tablespoon butter
mozzarella cheese
salt & pepper
Instructions
- In a skillet, melt 1 tablespoon butter and saute the mushrooms and onions on medium heat. Transfer into a ceramic pot.
- In a small sauce pan, melt ½ tablespoon butter, add wine and simmer on low heat for few minutes until the alcohol evaporates. Add whipping cream and sour cream, stir until combined. Add salt and pepper. Bring to a boil and pour over the mushrooms.
- Sprinkle cheese on top and bake at 190C for 10 minutes until the cheese turns golden.
