法國東部Dijon 的一種蛋糕 spice bread,裡面加入了三種香料,再配合蜜糖,味道濃厚,充滿䒢節日的味道。隨著蜜糖的種類和香料的份量,出來的味道也會不同,可以隨自己喜好而作出調整。
Ingredients (15 x 6.5cm)
- 120g cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon clove
- 1/4 teaspoon nutmeg
- 50g milk
- 30g granulated sugar
- 55g unsalted butter
- 105g honey
- 75g orange peel
- 1 egg (room temperature)
- Preheat oven to 160℃.
- Combine butter and honey in a small saucepan, bring to a simmer, then add milk and stir to mix well.
- Sieve all the powder in a mixing bowl. Add sugar and mix well.
- Add the honey mixture and whisk until smooth.
- Then add the egg and whisk to combine.
- Lastly add the orange peel.
- Pour the batter into a paper loaf pan and bake for about 25 minutes until the loaf is deeply browned and a cake tester inserted in the center comes out clean.
- Transfer the loaf to a rack and let cool.
