臘鴨脾煲仔飯

早前到中環的華豐燒臘買了臘肉和臘腸做蘿蔔糕,便順道買一隻臘鴨脾做煲仔飯。因為怕臘鴨出油太多,所以不敢放在煲內同煮,而預先把它蒸好才在轉慢火時放進煲內煮幾分鐘,再熄火焗。煮好的效果也不錯,既有臘鴨香味又不油膩,也可放其他臘味做臘味煲仔飯。       [飯的做法請看蝦米菜脯煲仔飯的食譜]
