為什麼做煮物時要用落蓋 (Drop Lid)?

煮魚或其他煮物時蓋上落蓋(Drop lid)在材料上面可令煮汁不會急劇蒸發而導致燒焦,亦能保留食物和汁料的味道。落蓋應比鍋小一點(約2~3cm),可用木或不銹鋼製的(日式超市或百貨公司有售),也可用焗爐紙或錫紙自製。煮魚或汁較濃的食物時用紙或不銹鋼的較木造的理想,因為可以避免染上濃汁和魚腥味。
